VEGAN STUFFED PEPPERS WITH QUINOA

My mum used to make stuffed peppers with rice and beef and I loved this so much. Last week I was craving this for days! As I don’t eat meat that often anymore, I thought of a vegan alternative for this recipe. Green peppers filled with quinoa, vegan meat, vegan cheese and lots of spices. CREAMY CARROT GINGER SOUP

Do you also have those days when it is very cold outside and you just know that “today is a soup day”? Soups are just so easy and quick to make! We had -18 °C last week here, so I wanted something that really warms me up from the inside and boost my immune system. Carrot and ginger are just the perfect combination – in taste because they complement each other so well and also for an “immune booster”: carrots are very nutritious and ginger as a natural remedy helps to reduces inflammation, has an antibacterial effect and can work wonders against a cold.
